Coconut sugar is extracted from the nectar of coconut tree flowers. This sugar has a naturally low glycaemic index (35) - making it a valuable sugar substitute for those looking to control their blood sugar levels.
Because coconut sugar is unrefined, it retains the amino acids, minerals and vitamins found in the coconut flower nectar such as glutamine, potassium, magnesium, zinc, copper, and B vitamins. Compared to regular brown sugar, coconut sugar has 36 times the iron, four times the magnesium, and over 10 times the amount of zinc. It is suitable for diabetics.
